Remember that vegetable war I told you about. Well I am happy to announce I have won another small battle.
I had such success with the spinach muffins, I tried another recipe from Cooking For 10 and made Ozzie a spinach smoothie.
The recipe yields a lot of smoothie, even after cutting it in half, so I froze the extra in popsicle molds. Here is Ozzie enjoying a spinach popsicle on one of our few hot days so far this year. He likes the smoothies so much he asks for one almost everyday. I am loving his spinach and milk intake!
Spinach Smoothies
Ingredients:
1 banana
1 orange
1 pear
1 - 2 cups fresh baby spinach
1 cup milk
1/2 cup yogurt (I use Greek style)
1 T flax seed (optional)
Place all of your ingredients in a blender and blend until smooth. Add more milk for a thinner smoothie.
OH. MY. GOSH! I have to try this on my step-daughter. She likes eating the smoothies that I make anyway and loves popsicles, but is also a very pick veggie eater. So, we'll see...Maybe they'd be good for adults too. :)
